Authentic Chinese Simple Home Recipe- Fried Glass Noodles (Char Tung Hoon)
Dear readers, this is a simple homestyle recipe of fried glass noodles my grandma made sometimes for family gatherings on Sundays. Easy to make Chinese Comfort Food. Great with Curries too. Enjoy!
Fried Glass Noodles (Char Tung Hoon)
The Ingredients:
1 pkt of tung hoon (dried glass noodles) abt 250 gm
3 cloves garlic, minced
3 eggs (beaten with a dash of Oyster Sauce)
1 carrot julienned
1 cup Baby Spinach OR Bean Sprouts if you like
1 cup Fresh Shrimps, shelled OR diced Chicken Breast if you like
some Spring Onion, cut small
1-2 cups Chicken Stock
2-3 Tbsp light Soya Sauce
1 Tsp Sugar
some crushed White Pepper
Method:
1) Soak Glass Noodles in Cold Water for 10mins
2) Heat non-stick wok with a thin coat of cooking oil and add minced garlic
3) Add Fresh Shrimps OR Diced Chicken Breast, dish it out when half cooked
4) Add another Tsp of Cooking Oil and scramble the eggs
5) Add in drained Glass Noodles, 1 cup Chicken Stock, Carrot and Baby Spinach OR Bean Sprouts
6) Toss Fresh Shrimps OR Chicken Breast back in, add Soya Sauce and Sugar
7) Stir fry everything together, mix evenly for about 2 min, adding Chicken stock little by little if it gets too dry
Dish it out to serve and garnish with Spring Onion and crushed White Pepper
