Authentic Chinese Simple Home Recipe- Grandma’s Dark Soya Sauce and Ginger Chicken

Dear readers, this is a dish which is my dad’s favourite frequently made by my grandma as a dinner dish usually eaten with steamed fluffy plain white rice. Very simple and short cooking time. Enjoy!

Grandma’s Dark Soya Sauce and Ginger Chicken

The Ingredients-

3 large fresh boneless Chicken Thigh cut into pieces (Chicken wings OR Chicken Breast can be used too)

1/4 cup Fresh Ginger, julienned

1-2 cloves Garlic, sliced

1/2 cup Water

Pinch of Sugar

Pinch of Salt (Optional)*

Dash of Sesame Oil

4 Tbsp salted Dark Soya Sauce (the dark soya sauce has 2 versions, salted and sweet)

1 Tbsp Light Soya Sauce

1 Tsp Cornflour mix with 1/4 cup water

The Method-

1) Rub Chicken pieces in 2 Tbsp Dark Soya Sauce for abt 1min in a bowl

2) Heat a non-stick pan or wok with 1Tbsp oil

3) In low heat, saute Garlic and add Chicken

4) Add Dark Soya Sauce, Light Soya Sauce, 1/2 cup water and Ginger. Stir Fry.

5) Add pinch of Sugar and pinch of Salt* if you prefer ita little saltier

6) Add dash of Sesame Oil

7) Pour in Cornflour mixture little by little, stir fry til Chicken is cooked. Add more Cornflour mixture if necessary  to thicken the sauce or balance the saltiness

7) Dish out and serve with steaming hot rice or boiled fresh noodles
