Baked Chicken and Potato
A delicious dinner you can whip up in less than one hour. You will love this special dinner.
You will need
4 boneless skinless chicken breasts, about 1 1/4 pound
1/4 cup honey mustard
3/4 cup baking mix, Bisquick
1 1/2 small red potatoes, cut in cubes
1 medium bell pepper, cut into pieces
1 medium red onion, cut into 12 wedges
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 Heat oven to 400 degree F. Spray 15×10x1 inch pan with cooking spray 2 Brush chicken with 2 tablespoons of the mustard, then coat with baking mix (Bisquick). Place 1 chicken breast in each corner of the pan. Place potato, bell pepper, and onion in the middle of the pan; brush vegetables with remaining 2 tablespoons mustard. Spray vegetables with cooking spray; add cheese and garlic powder evenly over the chicken and vegetables.
3 Bake uncovered 35 minutes, stirring vegetables occasionally, until potatoes are browned and chicken juice is clear when the the thickest part is cut.
