Basque Chicken Recipe

Basque chicken is a great dish full of flavors.

Serves  : 6

Ingredients

  • 1 chicken whole
  • 6 tomatoes very ripe
  • 3 peppers (yellow, red, green)
  • 5 Espelette green peppers (or more to taste)
  • 1 large onion
  • 3 cloves garlic
  • Oil of olive
  • Flour
  • Thyme
  • Laurel
  • Salt, pepper

Method

  1. In a large saucepan (or wok is ideal), fry in oil of olive oil over low heat, the garlic, the onion, the peppers and cut peppers into strips.
  2. Once the onion becomes translucent, add tomatoes, peeled, cut into chunks, and the bay leaf and thyme. Add salt and pepper and let simmer about 25 minutes.
  3. Meanwhile, cut the chicken (drumsticks, thighs, white, wings) and flour the pieces as you fry over low heat in a pot or pan with a little oil of olive.
  4. Once the chicken is well cooked and colorful, mix it with the rest and let simmer about 15 minutes.
  5. Finally … it is served with rice, potatoes boiled in water, semolina.  It’s your choice.
