Basque Chicken Recipe
Basque chicken is a great dish full of flavors.

Ingredients
- 1 chicken whole
- 6 tomatoes very ripe
- 3 peppers (yellow, red, green)
- 5 Espelette green peppers (or more to taste)
- 1 large onion
- 3 cloves garlic
- Oil of olive
- Flour
- Thyme
- Laurel
- Salt, pepper
Method
- In a large saucepan (or wok is ideal), fry in oil of olive oil over low heat, the garlic, the onion, the peppers and cut peppers into strips.
- Once the onion becomes translucent, add tomatoes, peeled, cut into chunks, and the bay leaf and thyme. Add salt and pepper and let simmer about 25 minutes.
- Meanwhile, cut the chicken (drumsticks, thighs, white, wings) and flour the pieces as you fry over low heat in a pot or pan with a little oil of olive.
- Once the chicken is well cooked and colorful, mix it with the rest and let simmer about 15 minutes.
- Finally … it is served with rice, potatoes boiled in water, semolina. It’s your choice.
