Batter Fried Chicken
This makes a nice crispy coating.

This chicken is delicious when fried golden brown.
Batter Fried Chicken
- 1 two pound chicken cut up.
- 1 cup water
- 1 celery stalk, coarsely chopped
- 1 small onion, cut in half
- 1 clove garlic, cut in half
- 1 teaspoon salt
- 1/8 teaspoon pepper

Fritter Batter
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 eggs, beaten
- 3/4 cup milk
- 1 tablespoon oil
- Place chicken in Dutch oven and add the water, celery, onion, garlic, salt, and pepper.
- Cover and cook until tender, approximately 20 to 30 minutes.
- While chicken is cooking, prepare fritter batter.
- When chicken is done remove from pan and drain, pat dry with paper towels.
- Cool slightly.
- Heat deep fryer to 350.
- Dip chicken in fritter batter to coat.
- Fry until pieces are golden.
- Place fried chicken pieces on cookie sheet lined with paper towels.
- Keep warm in a 200 oven until ready to serve.
