Buffalo Chicken Wing Pizza
A chicken wing pizza recipe straight from Buffalo, New York.
Growing up in Buffalo, New York you soon learn that every pizzeria has their own version of chicken wings – and there’s a pizzeria on just about every block.
I’ve looked around and found other chicken wing pizza recipes on the internet, but none of them seem to be authentic Buffalo recipes. (By the way, chicken wings should NEVER be dipped in ranch dressing!) I came up with this recipe a few years ago to try to represent the taste of the authentic Buffalo chicken wing as close as possible.
As any Buffalonian will tell you, it’s all about the hot sauce and bleu cheese. Franks Red Hot Sauce is my favorite (and a must have for any Buffalo home); but if you can’t find it in your area, there are many others that will do. Try to find a hot sauce that adds both heat and a bit of flavor and stay away from Tabasco for this recipe. Ken’s bleu cheese seems to be the closest to Buffalo bleu cheese (which is made from scratch in most pizzerias in the area).
Although not the healthiest meal, this is certainly one of my favorite recipes and whenever I make it for guests I never seem to have leftovers. You can always make your own pizza dough; but, for a quick and easy meal, I cheat and use Pillsbury refrigerated pizza crust.

Ingredients
- Pam, non-stick spray
- One package Pillsbury refrigerated pizza crust
- Olive oil
- 3/4 cup bleu cheese dressing (Ken’s brand is the closest you can get to Buffalo bleu cheese dressing, outside of the Buffalo area)
- Three chicken breasts, cooked and shredded
- ½ cup hot sauce, or to taste (preferably Franks Red Hot)
- 1/8 cup melted butter, or to taste
- ¼ cup chopped celery (optional)
- 1/2 cup mozzarella cheese
Method
- Preheat oven to 350°
- Combine hot sauce with melted butter and mix into chicken. (Note: you can adjust the proportions of butter to hot sauce depending on your taste) Set aside.
- Spray a large cookie tray with Pam
- Open the pizza dough and spread evenly onto the cookie tray
- Spread a very thin layer of olive oil over the pizza dough
- Spread the bleu cheese evenly over the pizza dough
- Spread the chicken mixture evenly over the bleu cheese
- Sprinkle the chopped celery over the chicken mixture
- Top with mozzarella cheese
- Bake for approximately 30 minutes or until crust is a light golden brown.
- Enjoy!

anyone who has ever eaten pizza in buffalo and would make an attempt to duplicate it would be silly to use pillsbury crust…i lived in buffalo for 1 year and currently in texas have spent time on and off in the last month trying to duplicate the sicilian crust recipe…can of frozen stuff?…yuck…so far what i can seem to find says that you need to find a recipe originating in or around Castellammare, Sicily…still guys…frozen is gross!…btw…ALWAYS use cake yeast for this REGARDLESS of most current recipes telling you that cheating with the packets is ok…

I have made this with home made crescent roll dough rolled out on a cookie sheet(or when I need it faster the already made dough) and it is amazing!
You can also just chop the raw chicken up, merinade it in the hot sauce and then fry it up in a pan, reserve the leftover juices and add sour cream to that, allow it to cool down and use that instead of the blue cheese mixture. Trust me it’s yummy!

I live in Buffalo (well, technically Kenmore outside of the city limits, but close enough). I tried this recipe over the weekend and it was a major hit! It tastes just like the Buffalo Wing Pizza that they make at the restaurant around the corner. We like it HOT though, so we added almost double the amount of hot sauce and skipped the celery.
I disagree with Aubrey though – I don’t think Buffalo pizza = Sicilian pizza at all! The Pillsbury crust is fast and works great (and it’s not frozen). A good homemade dough works great too, but it’s too time consuming for me. Another good option is a dough made at the grocery store (i.e., Wegmanns or Tops).

Thank you for a great, easy recipe! It was a huge hit with all 6 of my kids!!!! I used homemade pizza dough mainly because it saves money, something we have to do during these problematic economic times.
