Caribbean Chicken

Serves 2, easy to make.

Ingredients:

2 6oz. skinless boneless chicken breasts

2 eggs

2 oz. thinly sliced ham

1/4 tsp. lemon pepper seasoning

1 banana cut in half

1/4 cup flour

Directions:

Step 1: Preheat oven to 375.

Step 2: Flatten checken with mallet. Roll 1/2 ham around each bana half. Wrap each chicken around ham and banana. If needed, secure with toothpicks.

Step 3: Beat eggs and season with lemon pepper.

Step 4: Coat chicken with flour and roll in the egg mixture.

Step 5: Bake 20-25 minutes or until chicken is done
