Catalina Crunchy Chicken Salad Supreme

  • 2 pounds of skinless boneless chicken breasts
  • 8-12 tbsp Catalina dressing
  • 1 1/2-2 cups unsalted cracker crumbs
  • your favorite lettuce/salad mix
  • chopped jalapeno peppers
  • shredded cheese
  • green pepper
  • onion
  • tomato
  • any other favorite salad vegetables

Preheat the oven to 350 degrees.  Dip the chicken in the Catalina dressing, making sure it coats all over on both sides.  Then dredge it in the cracker crumbs.  Bake the chicken about 20 minutes until it is crispy.  Serve each chicken breast over a plate of salad using the rest of the ingredients.
