Cheese and Anchovy Grilled Chicken Breasts
A lovely supper dish, with a deliciously different flavour.
Cheese and Anchovy Grilled Chicken Breasts.
Serves 6.
Ingredients
50g (20z)can of anchovy fillets in oil
30ml (2 tbsp) finely chopped onion
5ml (1 tsp) lemon juice
6 chicken breasts
vegetable oil for brushing
225g (8oz) Mozzarella cheese
Method
1. Drain 15ml (1 tbsp) of the oil from the the anchovy can into a small saucepan. Chop the anchovies finely.
2. Heat the anchovy oil, add the anchovies and onion and cook for about 5 minutes, until a paste forms. Stir in the lemon juice, then remove from the heat and leave to cool.
3. Lift the skin from each chicken breast and rub 5ml (1 tsp) of the anchovy mixture on the flesh underneath the skin.
4. Put the chicken pieces skin side down, on to a rack placed over a grill pan. Grill under moderate heat for 35-45 minutes until tender, turning once. Brush with oil occasionally during cooking, to moisten.
5. Cover the chicken breasts with slices of cheese and grill for a further 5 minutes, or until the cheese begins to bubble.
