Chicken Adobo Recipe

There are many versions of cooking adobo and this is my filipino-american side. I added some dried basil :] There is also a bonus recipe for my favorite side dish. I hope you like it as much as I do. Contact me if you have any request recipes or questions.


When you mix everything together. Browning the chicken and all.

Ingredients

  • 1 T. butter or 1 1/2 T. extra virgin olive oil
  • 10 piece of chicken thighs and drumsticks
  • 1 cup soy
  • 1/2 cup vinegar
  • 1 T. brown sugar or regular sugar
  • 1 1/2 tsp. basil
  • 2 bay leaf (dry)
  • pepper to taste

Method

In a large pot, start with adding the butter/oil and browing up some garlic and onions. Don’t burn it. Saute until onions starts to caramelize or brown. Add chicken and cover. Let it simmer until chicken is brown on both sides. An estimated time of 8 minutes or so.

Next, pour in soy, vinegar, basil, pepper, and bay leaves. Cover and let it simmer for 20 minutes to let the chicken cook through.

When chicken is almost done, add the tablespoon of sugar and mix it well.

Serve it with hot white rice and on my plate, I added some fresh mixes. I made it together and chow it down with mostly anything that I eat. If you are interested, here is the ingredients.

Ingredients

1 large tomato
1 medium size red onions
1 T. ginger
4 T. boggoong
(or you may sub. it with ”patis” or fish sauce.
****Cut all ingredients the way you desire, mix it well and place in fridge till ready to serve.
