Sometimes referred to as Chicken N Biscuits, this can be an amazingly simply dish, or it can be tricked up to be a gourmet entree.
Here is what you need.
Ingredients
- 1/2 to 1 lb of leftover chicken or turkey, shredded or chunked
- 1 can of chunk chicken or turkey if you like it a bit meatier
- 2 cans Cream of Chicken Soup
- 1 can milk (use empty soup can)
- 1 can water
- 1-2 cans of baking powder biscuits, enough to cover a 9×13 pan
Optional Ingredients
If you want to make this more of a gourmet feast you can also add any or all of these
- 1 Onion finely diced
- 3 Carrots finely diced, or 1 can
- 1 can Peas
- 1 can Corn
- Red Pepper flakes to taste
Preparation
Here is the preparation method I use. Preheat oven to 350 degrees. Take and chunk the leftover chicken or turkey. In a bowl, pour the 2 cans of soup, 1 can of milk, and 1 can of water. Add 1 can of chicken or turkey, shred it finely. Mix.
At this point, if you are going to add any of the optional ingredients, it is the time to do so. Add to liquid and mix.
Pour into 9×13 pan. Now add chunked meat, spread evenly. Open biscuit cans, and layer over the entire top of the mixture. Bake for approximately 30-45 minutes. You may cover the pan with aluminum foil so biscuits don’t burn. Alternatively, you can heat the liquid mix in a sauce pan until hot. This will cut down on oven time needed and then you only have to cook it as long as it takes for the biscuits to become done. Spoon out onto serving plates or bowls, extra mix from the bottom can be spooned over the biscuits.
That’s it. I told you it was easy. Serve and enjoy!
