Chicken Biryani
Biryani is a wonderful Indian dish. It can be made with beef, lamb or chicken. For this recipe, I have chosen chicken. The ingredients included will compliment chicken, but may not do so well for beef or lamb. Hope you enjoy!
Ingredients
250g basmati rice
1/2 tsp salt
3 tbsp vegetable oil
8 shallots, chopped
1 large onion, chopped
2 garlic cloves, finely chopped
2 tsp fresh root ginger, grated
6-7 chicken breast fillets thinly sliced into strips
1 tsp chilli powder
1 tsp ground cumin
2 tsp ground coriander
½ tsp ground turmeric
generous sprinkling of nutmeg
1 cup plain yoghurt
Wash the rice until the water runs clear, then leave to soak for one hour.
Drain the rice and place in a pan with enough cold water to come about 1cm above the rice.
Bring the water to the boil and then reduce the heat, cover and cook for about ten minutes until all the water has been absorbed.
Heat the oil in a frying pan, add the onions, garlic and ginger and fry for a few minutes, until lightly browned.
Add the chicken and stir fry until lightly browned.
Add the spices and stir for about two minutes. Stir in the yoghurt and simmer for 1-2 minutes. Add the part-cooked rice. Cover the pan with a clean tea towel and cover with the lid.
Place over a very low heat and cook for about 12 minutes.
Remove from the heat and stand for 5-6 minutes.
This is a relatively easy dish to make, and is very very tasty. Enjoy!
