Chicken Breasts Supreme

This is a wonderful recipe for chicken breasts that serves six.

Chicken Breasts Supreme

3 whole chicken breasts, halved

1 cup heavy cream or half and half, divided

1/2 cup plus 2 tablespoons all purpose flour, divided

1/3 cup plus 2 tablespoons butter or margarine, divided

1/2 cup chicken stock

3/4 cup shredded Cheddar cheese, optional

6 slices bread, toasted and buttered, optional

6 slices ham, about 1/8 inch thick

Preheat oven to 425 degrees

Dip chicken into 1/2 cup cream, then into 1/2 cup flour.  In a large skillet, melt 1/2 cup butter; saute chicken until brown on all sides.  Place chicken into 9×13 inch baking dish and bake 15 minutes.

In a medium skillet, melt remaining 2 tablespoons butter.  Saute mushrooms.  Add remaining flour and cook, stirring constantly, 2 minutes.  Blend in stock and remaining 1/2 cup cream; heat, stirring constantly, until thickened.  Remove from heat and add cheese. 

Place toast on serving platter.  Top with ham, then chicken breasts.  Spoon sauce over top and serve.
