Chicken Curry

Chicken korma is a great way of cooking chicken. Korma was introduced in India during the Mughal period. There are various recipes for mutton and lamb korma but chicken is the most popular.

How to make a delicious chicken curry.

Ingredients.

One and a half pounds of boneless chicken

Two onions finely chopped.

Four to six cloves of finely chopped garlic.

One and a half inch of ginger root chopped.

Four table spoons of olive oil.

Four bruised cardamom pods.

One bruised black cardamom pod

One inch long cinnamon

Two bay leaves

Two cloves

Half tea spoon of cumin powder.

Half tea spoon of corriander powder

One cup of whipped yogurt

One fourth tea spoon of freshly grated nutmeg

One and a half tea spoon of ground white pepper.

Two table spoons of cream.

One tea spoon of salt

One tea spoon of Garam Masala.

One tea spoon of chopped cilantro leaves.

NUT PASTE.

Three table spoons of white poppy seeds.

Three table spoons of unsalted melon seeds.

Three table spoons of blanched almonds.

Three table spoons of raw cashew nuts ,soaked.

Method.

Cut the chicken into bite size pieces and set aside. Saute the onions, garlic and ginger until transparent and slightly brown, blend together with one fourth cup of water and set the paste aside. Blend the nut paste ingredients with just enough water and set aside.

Heat the olive oil and saute the cardamom, cinnamon, cloves and bay leaves for a few minutes, then add the cumin, coriander and blended onion paste. Saute at very low heat stirring constantly, until the oil separates, taking care that the mixture does not change color. Add the yogurt and continue cooking for fifteen minutes, stirring from time to time. Add the nutmeg , pepper and chicken and let it simmer over low heat for another fifteen minutes, until the chicken is tender. Add the nut paste and let it simmer for another three to four minutes.

Add one tablespoon of cream, salt and half of the garam masala, stirring well. Remove from the heat and serve garnished with the remaining cream, garam masala and chopped cilantro.
