Chicken Curry Malaysian Style

Ingredients

  • 1 chicken, cut into 8 pieces
  • 1000 ml coconut milk
  • 1 turmeric leaf
  • 1 stalk fresh lemon grass
  • 3 kaffir lime leaves
  • 1 tbsp tamarind juice/ asam kandis juice
  • 4 tbsp sliced red chilies
  • 2 tbsp sliced shallots
  • 2 tsp sliced turmeric
  • 1 tsp sliced galangal
  • 1 tsp coriander
  • 1 1/2 tbsp salt

Method

Boil the coconut milk over medium heat.

Blend all ingredients in a) into a paste. Put the paste, turmeric leaf, lemon grass, kaffir lime leaves, and tamarind juice into the boiling coconut milk, and continue cooking.

Stir well until the coconut milk turns oily. Add the pieces of chicken and continue cooking until done and sauce turns thick.

Transfer to a serving bowl and serve with rice.

Serve          : 8

    Would love to try this as I’m a huge fan of curry and rice. However, I’m not sure where I would be able to purchase the kaffir lime leave. as I’m sure this is what gives this dish it’s uniqueness. I’ll try the Asian stores in Toronto possibly.
