Chicken Dum Biriyani

Unique combination of chicken and rice, finger licking recipe.

Ingredients

  • chicken 500gm
  • rice-4cups(clean, presoaked)
  • water-6 cups
  • milk-1 cup
  • ghee(home made butter)-1/2 cup
  • oil-as per the requirement
  • salt according to taste
  • onions sliced – 1 full cup

Spices

  • cinnamon(few chunks)
  • cloves-5-6
  • cardamom-finely grounded

Marinate:

  • curd -bowl full
  • chilly powder -1/4 cup
  • turmeric-1/2 tsp
  • ginger garlic paste-3-4 big spoonful
  • lemon juice-2-3 tsp
  • salt according to taste

Take the chicken, add all the marinate ingredients and mix the meat well, and put it aside for 30 minutes

Method

  1. take a thick pan
  2. add oil and ghee ,after the oil is heated add sliced onions 
  3. let them turn a little more than golden brown
  4. add marinated chicken
  5. sir it at regular intervals till it is half cooked
  6. in another dish
  7. boil the rice, with the spices added in the water, make sure the rice is not completely cooked 
  8. now take a big dish and now arrange the  chicken and rice in layers
  9. let the bottom be a layer of rice and then chicken and then rice and so on
  10. now when the layering is complete
  11. pour the milk in such a way that it reaches every grain in the dish
  12. seal the dish with silver foil
  13. if not then place a dish full of water on the lid so that the steam won’t go away  and that’s what the Dum is steaming the rice
  14. now put the dish on low flame for about 15 minutes

You delicious chicken Dum biriyani is ready
