Chicken Parmesan
Make this easier and use store-bought sauce from a jar.
Ingredients
- 2 eggs, lightly beaten
- 1 tsp. salt
- dash of pepper
- 4 whole boneless, skinless chicken breasts, split.
- 1 cup fine, dry, unseasoned bread crumbs.
- 1/2 cup vegetable oil
- 4 cups tomato sauce
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1 Tbsp. parsley
- dash of garlic powder
- 2 tbsp. butter
- 1/2 cup grated Parmesan cheese
- 8 oz. Mozzarella cheese, sliced or grated
Method
1. Combine eggs, salt, and pepper. Dip chicken breasts in egg, then into bread crumbs.
2. Heat oil in electric skillet to 360 degrees. Brown chicken on both sides and remove to casserole dish.
3. Stir tomato sauce and herbs in a pan. Heat until boiling and then simmer for 10 minutes. Stir in butter and pour sauce over chicken.
4. Sprinkle with Parmesan cheese. Cover and bake at 325 degrees for 30 minutes. Uncover, put Mozzarella cheese on top, and bake 10 minutes more uncovered.
Variation: Use jarred spaghetti sauce
Dinner: Serve with rice, salad, broccoli and bread.
