Chicken Pulao for General Flue.(natural Medicine)

Chicken pulao gives heat to the body. It gives large amount of energy, body builds strengthen. The spices used in chicken pulao reduce the common cold, cough. It is very good Nature cure/natural medicine used in general flue. The ingredients and procedure prepares for six people and is as fallows.

Ingredients:- 1chikken (Small),                                 400 gm rice

                    3 inch piece of ginger,                          250 gm minced mutton,

                    30 gm raisins,                                      5 table spoons ghee,

                     4 sticks of cinnamon,                          3 medium size onions,

                     8-10 piper corns,                               1 table spoon chili powder,

                     8-10 cardamoms,                               4-5 cloves garlic paste,

                     Fine pinch saffron,                              salt to taste,

                     small cup curds,      

Procedure:–

Heat the ghee and fry sliced onions in it. Add minced mutton and fry, seasoning with salt and chili powder. To the garlic paste add a little water and blend. When the water in the minced mutton dries up, add this paste and the well beaten curds. Keep frying till the mince is browned. Slice the ginger finely. Wash and clean the raisins.

Clean the chicken and wash it. Stuff it with half the cooked mince, all the ginger and the raisins. Stitch up the chicken. In another half cup of curds mix in a little saffron. Place the chicken in a deep pan with a table spoon of ghee. Pour enough curds to cover the chicken. Brown the chicken, then adds salt and just enough water to cook the chicken.

While the chicken is being done, wash the rice and drain out all the water. To the remaining mince add all the spices, a little ghee and the rice. Cook on a slow fire. The rice has to be cooked till half done and any extra water in the chicken may be poured into the rice.

When the rice is quite dry and the chicken is tender, place the chicken in the rice and cook cover on a very slow fire. If you have a coal fire keep some burning embers on the lid of the pan. Sprinkle mix hot spices powder before serving.
