Chicken Risotto
An easy, delicious, and fast healthy family sized dinner.
Ingredients
2 Boneless, Skinless Chicken Breasts
1/2 Medium Sized Onion, Chopped
1 Can (284 mL/10 fl oz) Sodium Reduced Chicken Broth
1 Can (284 mL/10 fl oz) Water
2 Cups of Uncooked Rice
1 Cup Milk
3 Teaspoons of Pesto
2 Cups Fresh Spinach Leaves, Torn Up
1/2 Red Bell Pepper
1/2 Yellow Bell Pepper
1/4 Cup Parmesan Cheese
Directions
1. Saute boneless, skinless chicken breasts until cooked through. The internal temperature of the chicken needs to be at least 170º Fahrenheit. Do not under cook the chicken as it can lead to food poisoning! These breasts can be cut into bite sized pieces either before or after they’re through cooking.
2. Add chopped onion and peppers. Saute another 5 minutes.
3. Add spinach and pesto. Saute about 2 minutes or until spinach is wilted.
4. Add chicken broth, water and milk. Heat until boiling.
5. Add rice. Reduce heat to low and cover. Simmer for about 10 minutes.
6. Check to see how the rice is doing after simmering for 10 minutes. The cook time can be different depending on which type of rice is used. Remove from heat if rice looks plumped up. Let it sit for about five minutes to absorb some of the fluid. Enjoy!

This is delicious! It is pretty healthy until you take into account that I always end up eating to much because it tastes so good…
