Chicken Rolls

What do you do with chicken and bread? Make chicken rolls, of course.
Ingredients
- 300 grams cooked chicken, minced
- 2 cups breadcrumbs
- 2 table spoons lemon juice
- 2 eggs
- 1 onion, chopped
- 1 table spoon coriander leaves, chopped
- Dry breadcrumbs
- Salt and pepper to taste
- Oil for deep-frying.
Preparation
- Mix the chicken, lemon juice, salt, pepper, breadcrumbs, onion, leaves and 1 egg together till smooth.
- Make the mixture into small sausage – shaped rolls an dip in the beaten egg.
- Coat with breadcrumbs.
- Repeat the egg, and breadcrumb coating.
- Deep-fry the rolls four at a time until golden brown.
- Drain and serve hot.
