Chicken Rolls

What do you do with chicken and bread? Make chicken rolls, of course.

Ingredients

  • 300 grams cooked chicken, minced 
  • 2 cups breadcrumbs 
  • 2 table spoons lemon juice
  • 2 eggs 
  • 1 onion, chopped
  • 1 table spoon coriander leaves, chopped 
  • Dry breadcrumbs 
  • Salt and pepper to taste 
  • Oil for deep-frying.

Preparation

  1. Mix the chicken, lemon juice, salt, pepper, breadcrumbs, onion, leaves and 1 egg together till smooth.
  2. Make the mixture into small sausage – shaped rolls an dip in the beaten egg.
  3. Coat with breadcrumbs.
  4. Repeat the egg, and breadcrumb coating.
  5. Deep-fry the rolls four at a time until golden brown.
  6. Drain and serve hot.
