Chicken Salad

This is fun. You can eat it how you like, with chips as a dip, or fill tortilla. Hope you enjoy!

                                              Chicken Salad

     Ingredients:

2 cups chopped cooked chicken         

Black pepper as needed                             

1 Diced avocado                               

1/4 tsp Garlic powder                        

1/2 cup sliced,stuffed olives               

1/2 tsp Chili powder

1/2 cup Monterey jack shredded cheese

1/2 Cup shredded cheddar cheese   

1/2 onion, pureed

1 Tomatillos chopped

1/2 cup chopped Culantro

Mayonnaise as needed

       Garnish:

     1 tsp minced Green chilies

     2tsp Sun dried tomatoes

Preparation:

   Lightly toss all 11 ingredients, moistening with mayonnaise as needed and desired. Place in serving dish, top with garnish. Chill for about an hour. Can be eaten as a dip, Tortilla filler, as a side dish,etc….
