Chicken Stuff
A hearty satisfying, not-quite a casserole.
One day I was wondering what to make for dinner for both myself and my family. All I knew was I didn’t want to go out to eat, go to the store, or order a pizza. So I rummaged through my cupboards to see what I had, looked in the fridge, and started pulling things out.
What I came up with, well, when my daughter asked me what it was I simply said “Ahhh…Chicken…Stuff. Chicken stuff.” And so Chicken stuff was born.
I make it every so often as it was a real winner. And it’s great to make for gatherings in the back yard. Especially if you have some other stuff on the grill.
It’s hearty, tasty, and very satisfying. Not quite a casserole. Not quite sure what to call it.

Ingredients
- 1 lb of chicken, cut into chunks
- 1 1/2 lb of red potatoes, halved
- 1 large onion, dice into large chunks
- 1 green pepper, dice into large chunks
- 1/2 lb pea pods
- 1 lb baby carrots
- 1 can tomato soup
- 1 can water
- 1 cup basic BBQ sauce (your favorite BBQ sauce will do, I prefer Heinz Plain or Masterpiece Plain)
Method
- Preheat oven to 400 degrees.
- Chunk the chicken, onion, green pepper into about 1 inch pieces. Halve the red potatoes.
- Now mix all the solid ingredients in a bowl.
- Put the mixed solid ingredients into a 13 X 9 baking pan.
- Mix the soup, water, and BBQ sauce and pour over the stuff in the pan.
- Bake in the oven for about 45 minutes, or until the potatoes and carrots are soft.
Serve.
