Chicken to The King

A recipe.

Ingredients

3 tablespoons butter or margarine
1 cup (3 oz. Approx.) mushrooms (fungi), fresh sliced
1/2 cup chopped red pepper
1/2 cup chopped onion
2 tablespoons all purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1 teaspoon dried oregano
2 cans evaporated milk CARNATION Evaporated Milk (12 fl. Oz. Each)
3 egg yolks large, beaten
2 cups cooked chicken, chopped
2 tablespoons dry sherry (optional)
10 scones (biscuits) refrigerated, baked according to package directions (optional)

Instructions

Melt butter in large saucepan over medium heat. Add the mushrooms (fungi), red pepper and onion, cook, stirring occasionally, for 3 to 4 minutes or until soft but not browned. Add flour, salt and paprika. Add evaporated milk gradually. Cooking over medium heat, stirring constantly, until mixture begins to boil and thickens.

Mix with egg yolks, 1 cup of the sauce thickened, pour into pan. Cooking over medium heat, stirring constantly, until mixture begins to boil.  Add chicken and sherry. Heat everything.

Serve immediately over rice, pasta or hot rolls.
