Chicken (wings) Curry with Vegetables

A delectable and body warming recipe you should try, especially this cold winter time.

Chicken Curry is the usual recipe for chicken using curry powder that you’ll find all over the internet and recipe books but I have tried making a variant of this recipe by adding vegetables. I published this recipe because my sister-in-law, who’s working abroad, called my brother (her husband) a week or so asking him how to cook chicken curry. Because my brother is not very familiar with the recipe he called me up asking for it. And here’s how to cook this spicy dish. Dishes with curry powder have a distinct spicy taste.

Ingredients

  • ½ kg chicken wings – my favorite (a disjointed one whole chicken or other choice cuts can also be use)
  • 1 100 g pouch coconut powder, dissolved in a glass of water
  • 4 tbsp tomato sauce
  • 2 medium-sized carrots cut slantwise into serving pieces
  • 2 potatoes, cut into serving pieces
  • 2 tbsp. cooking oil
  • 2 medium-sized onions, chopped
  • 1 clove garlic, minced
  • 2 tbsp. chili powder or 10 green and red siling labuyo or chili pepper (optional)
  • 2 to 3 tbsp curry powder
  • Salt to taste
  • 1 tsp. monosodium glutamate (optional)

Procedure

  • Fry garlic until brown, add onion until golden brown
  • Add the chicken wings, cook until light brown and fats start to appear
  • Add curry powder and cook for few minutes
  • Pour coconut milk, tomato sauce, salt and chili pepper or chili powder
  • Continue simmering, stirring frequently
  • When more liquid is needed, add water. Dish should not be allowed to dry.
  • Cook about 20 minutes or until the chicken is tender
  • Add carrots and potatoes, cook for few minutes
  • Dish out and serve hot
  • Best serve with rice

Vegetables like beans, young corn, broccoli and cauliflower can also be added. Curry powder is a popular ingredient which is often included in many Asian dishes especially in South Asia and Southeast Asian regions.
