Chicken with a Twist
This is my version of a great chicken salad.

Chicken is one of my favorites and low in fat so I am always looking for new ways to prepare i. I am also a sweet and spice lover. I crave these tastes and that’s how the following recipe was invented.
First cook 3 chicken breasts and dice into a bowl.
1 stalk celery, finely diced
1 onion, finely chopped
1 apple, peeled, and diced
1/3 cup raisins golden are best but regular raisins can be used
1/3 cup seedless green grapes, cut in half
1/4 cup chopped toasted pecans or walnuts
1/8 teaspoon ground black pepper
1/2 teaspoon curry powder
1 cup light mayonnaise
Mix all ingredients togetherand volia you have a sweet spicy and low fat lunch or light dinner. You can either make a great sandwich with a couple lettuce leaves added or a light dinner with a scoop added on top of a garden salad. Enjoy!
