Chicken with Vegetables

An easy dish using the frying pan when you don’t want to eat another salad or because of lack of time.

Icgredients

  • 250 grams chicken (chest) chopped in cubes
  • 2 medium sized tomatoes in cubes
  • 2 onions in grommets
  • 2 green peppers in grommets
  • 1 eggplant in cubes
  • 100 grams of yellow cheese in cubes
  • 1 tablespoon of vinegar
  • 1 glass of red wine
  • salt and pepper
  • 1/2 tablespoon of sweet paprika
  • some olive oil

Method

  1. Saute the chicken cubes.
  2. Add the vinegar and the wine. Boil for 2 minutes.
  3. Add all the other ingredients except the cheese.
  4. When the chicken meat is cooked and the liquids had evaporated add the cheese and remove from the heat.
  5. Serve with pasta, rice or boiled potatoes.
