Cold Chicken Wings with Brown Sauce

Cold Chicken Wings with Brown sauce is a recipe from China. These chidken wings have an appealing flavor and are just different enough to be interesting.

COLD CHICKEN WINGS WITH BROWN SAUCE

3 tablespoons Chinese wine or dry sherry

1 tablespoon salt

1 teaspoon ground pepper

2 pounds chicken wings (about 10)

1/2 stalk leek, cut into small pieces

1 teaspoon powdered ginger or 4 slices ginger

5 tablespoons soy sauce

3 tablespoons sesame oil

1 tablespoon sugar

Mix wine, salt and pepper, rub into wings.  Cover with leek and ginger and steam over high heat for 30 minutes.  Heat soy, sesame oil, sugar and 1 cup juice from steaming liquid.   Add chicken wings, 3 at a time, bring to a boil, turning constantly until color changes.  Cool wings and store in container with lid.
