Creamy Chicken Enchiladas

A rich, tasty chicken enchilada dish that is great for a party or for a special meal.

This is an easy recipe for a Tex-Mex meal that is filling and great tasting. This makes enough chicken enchiladas for four people as a main course.

You’ll need

  • 13×9 baking dish
  • 1 TBSP butter
  • 1 medium yellow onion, chopped
  • 1 (4.5 oz) can chopped green chilis drained
  • 1 (8 oz) package cream cheese, cut up and softened
  • 3 1/2 cups chopped chicken breast
  • 8 (8 inch) flour tortillas
  • 2 (8 oz) packages Monterey Jack cheese, grated
  • 2 cups whipping cream

What you’ll need to do

Preheat the oven to 350 degrees.

Melt butter in a large skillet over medium heat. Add onion and sautee 5 minutes. Add green chiles. Sautee 1 minute. Stir in cream cheese and chicken. Cook, stirring constantly, until the cream cheese melts.

Spoon 2-3 TBSPs chicken mixture down the center of each tortilla. Roll up the tortilla, and place seam side down in a lightly greased 13 x 9 baking dish.

Sprinkle with Monterey Jack cheese and drizzle with whipping cream.

Bake at 350 degrees for 45 minutes.

This goes great with a salad or with guacamole and chips.
