Crisp Fried Chicken Central Java Style

Ingredients
- 1 (700 g) chicken, halved
- 2 Salam leaves/ bay leaves
- 500 ml water
- Batter: 1 egg
- 5 tbsp tapioca flour
a)
- 1 tbsp sliced shallots
- 1 tbsp sliced garlic
- 1 tsp sliced ginger
- 1 tsp sliced turmeric
- 1 tsp sliced galangal
- ½ tsp coriander
- 5 candlenuts
b)
- 2 tbsp sliced shallots
- 1 tsp shrimp paste
- 1 tbsp sliced red chilies
- 50 g tomatoes
- ½ tsp salt
- 2 tbsp oil
- Garnish
- Cucumber
- Tomatoes
- Lettuce
Method
- Blend all ingredients in a) into paste
- Put water in a pan, add chicken and half portion of paste and Salam leaves, bring to boil until the chicken becomes tender
- Heat oil in a frying pan, deep-fry the chicken. At the same time, mix the remaining paste with tapioca flour and egg. Pour the mixture into the chicken being fried until the batter becomes crisp.
- Put in a serving dish, serve with sambal and garnish with raw vegetables
- To make sambal: blend all ingredients in b) into a paste. Put oil in a pan and sauté the paste until done.
