Crispy Firecracker Fried Chicken

Not for the faint of heart. This chicken is hot, spicy and extra crispy.
Ingredients
- 4 chicken breast (split)
- 4 chicken thighs
- 4 drumsticks
- 4 large eggs
- 1 tsp garlic powder
- 1 tsp dried thyme or basil
- 2 cups all purpose flour
- 1/4 cup corn starch
- 4-5 tsp salt
- 2-3 tsp ground black pepper
- 1 ½ -2 tsp cayenne pepper
- Enough oil for frying
- Cold beer (optional)
Method
- In a large shallow bowl whisk eggs
- In another bowl combine flour, corn starch, salt, pepper and spices
- Dip each piece of chicken into flour mix, then into egg, then back into flour mix
- Shake off extra flour and set aside until all of the pieces are coated
Frying
- Preheat oven to 450degrees
- Fry chicken a few pieces at a time in 365-375 degree oil for 4-5 minutes or until golden brown ( deep fryer is best) then place on wire rack on top of a baking sheet
- When all of the pieces have been fried, put baking sheet into preheated oven, uncovered for 15-20 minutes or until completely cooked through.
Serve with cold beer to put out the flames.

This sounds really good. I would love to try it but, making it for just one person seems like a waste of time. You will have to call me the next time you are making it for supper….you make the chicken and I’ll bring the fire extinguisher.

Ooh! That’s made me feel so hungry. I read all the way through wondering where the beer came in (sometimes fish and chips here are made in a beer batter).

Beer makes a good marinate too. Your chicken sounds nice and crispy. I will have to try it toning the spices down a bit, though. lol
