Cumin Chicken & Avocado Salad

Easy and tasty Salad perfect for the summer!

Mix some oil and spices in a big bowl, then use the mixture to dress the chicken. Pan-fry the chicken (without adding extra oil) in a large frying pan (non stick) for a couple of minutes on each side. Put the tomatoes into any spiced oil left in the large bowl, then add them to the pan. Cover and cook for 5 minutes more until the chicken is cooked and the tomatoes are warm and begin to soften up.

While waiting, throw the onion, lettuce, coriander and avocados into the Caesar dressing and put it onto a large platter. Finish with small handfuls of the beans and scatter with the tomatoes. Cut the warm chicken and pile on top. Serve with crusty bread or crunchy tortilla chips.
