Delicious Peanut Butter Chicken

This is a mouth-watering dish which tastes amazing but is incredibly easy to make!

Ingredients

A splash of olive oil, 2 crushed cloves of garlic, 4 x skinless diced chicken breasts, 1 red chilli deseeded and finely chopped, 6 spring onions chopped, 3 tablespoons of peanut butter, 1 small carton of single cream, salt and pepper to season.

Method

Heat the olive oil in a wok on a medium high heat and add the garlic, stirring as it cooks through.  Add the diced chicken and cook through, stirring occasionally to stop it from catching.  When the chicken is cooked, put in the chopped red chilli and the spring onions and stir fry  until the onion is transluscent. 

All of your raw ingredients should now be cooked through.  Throw in the peanut butter and stir through, it will be quite claggy at first and will feel quite stiff to stir but keep working at it as the heat softens it.  While stirring, add the single cream until the sauce reaches a thick liquid consistency, simmer for a few minutes so that everything is mixed and heated through.  Add salt and pepper to taste and serve immediately with wild rice.
