Easy lemon chicken recipe that goes together in a snap.

When it comes time to decide which meat to serve for dinner, chicken is the old reliable. It’s the meat of choice if you’re trying to eat healthy and there is no end to the ways that chicken can be prepared. Here is an extremely easy Baked Lemon Chicken recipe that can be thrown together in a snap.

Ingredients

  • 1 whole chicken
  • 1 whole lemon
  • Garlic salt
  • Course ground pepper
  • Parsley
  • Shallow baking pan
  • Cooking oil spray
  • Foil

Method

Preheat oven to 400 degrees. Spray baking pan with spray oil. Take the internal organs out of the chicken cavity. Wash the chicken in cool water, inside and out. Set the chicken in the pan.

Roll the lemons around on the counter, bearing down on them slightly to mash the pulp inside of the lemon. Stab the lemon several times all the way around with a fork or knife. Push both lemons into the chicken cavity.

Generously salt, pepper and parsley the chicken. Cover with foil and bake approximately 1 hour. Remove the foil during the last 15 minutes to brown the chicken. Serves 4.
