Famous Ambur Chicken Biryani
Ambur is a place in Tamil Nadu, Southern India, which is famous for its Biryani Dish. Here is the method to prepare the Chicken Biryani, the Ambur Method.
Ingredients
- Rice – 2 cups
- Chicken – 1/2 kg
- Onions – 1/2 cup (finely sliced)
- Green Chillies – 6-7 Nos.
- Ginger Garlic Paste – 2 tsp
- Mint Leaves – 1 cup
- Cilantro – 1 cup
- Tomatoes (chopped) – 1/2 cup
- Coconut Milk – 1/2 cup
- Curd – 1/4 cup
- Lemon Juice – 1 tblsp
- Garam Masala Powder – 1/2 tsp
- Turmeric Powder – 1/2 tsp
- Cinnamon – 2 Nos.
- Cloves – 4 Nos.
- Cardamom – 4 Nos.
- Bay Leaves – 2 Nos.
- Cooking Oil – 4 tblsp
- Ghee – 2 tblsp
- Salt – As per your taste
Methods
- Wash and soak the rice for 1/2 hour.
- Wash the chicken and mix it with curd, garam masala, turmeric powder.
- Add 1/2 tsp ginger garlic past and 1/2 tsp salt.
- Grind green chilies with little water and keep aside.
- Use pressure cooker to heat the oil and ghee. Add cinnamon, cloves, cardamom and bay leaves. Wait until they pop and add the onions. Sauté until they turn golden brown. Then add ground chilies and sauté till the water is absorbed.
- Add ginger garlic paste and sauté for another minute.
- Add marinated chicken and sauté well till it is dry and oil is separated for 5 – 10 minutes.
- Add mint leaves and cilantro (chopped) and mix well. Then add tomato and mix well.
- Once tomato is added and mixed, add rice, coconut milk, lime juice, 3 cups of water and salt to your taste.
- Wait until it starts boiling, the close the lid, cook in very low flam for 1/2 an hour.
- Serve hot along with raitha
