Fried Chicken with Lemon Sauce

Simple recipe to follow. Especially for busy mums. This recipe is for two. I prefer thigh but you may use any other part of a chicken.

Fried Chicken With Lemon Sauce

2 pieces of chicken thigh  (about 450g)

2 slices of lemon

1/4 tsp diced parsley

Marinade:

1 tsp chopped shallot

2 tbsp white wine

2 tbsp lemon juice

1/2 tsp sugar

2 tbsp chicken stock

a  pinch of salt and pepper

Method:

1. Debone the chicken thigh, rinse and pat dry.

2. Mix all the marinade together in a bowl. Coat the chicken thigh with the marinade for 30 minutes.

3. Dust the chicken thigh with a litle corn flour. Deep fry till golden brown. When done, put it aside on a plate.

4. Take the leftover marinade mixture, put it in a sauce pan. Bring it to boil on gentle fire. Once boiled, take it of the heat and pour over the chicken.

5. Serve hot.
