Fried Rice with Thai Chicken and Cashew Nuts

(Thai Name: Gai Pud Med Ma Muang) – Just a quick AUTHENTIC Thai Food for someone who likes it HOT.
Ingredients
- Chopped Garlic
- 4 ounces of Cashew Nuts
- 1 pounds boneless skinless Chicken Breasts, cut into cubes
- 5 tablespoons of Fish Sauce
- 10 tablespoons of Olive Oil
- 3 tablespoons of Oyster Sauce
- 1 bunch Green Onions, chopped
- Dry Whole Chili
- Maggi Sweet Chili Sauce
- 1 Cup of Jasmine Rice
Method
- Slice chicken breasts as thin as possible and mix with Maggi Sweet Chili Sauce
- Cook rice (recommend microwave – add 1 ½ of water to rice, microwave on high for 5 minutes, reduce temperature to medium and cook for another 15 minutes), set aside.
- Heat Olive oil in a wok, and add chopped Garlic until golden brown and transfer to a bowl. Set aside.
- With the same oil, add chicken, stir for 5 minutes on high heat, season with fish sauce.
- Add cooked rice, garlic, dry chili, oyster sauce, cashew nuts, and green onions, stir fry for about 5 minutes and serve.
