Chicken and cabbage salad.

Ga xe phay – (Chicken and cabbage salad.)

1  Chicken (1kg), 50g carrot – shredded, 500g Cabbage – shredded, 5g Vietnamese mint (Rau rum ), 100ml fish Sauce ( Nuoc mam ).

Marinade.

80g Onion, 150ml vinegar, 15g salt, 20g sugar.

1. Boil the chicken for 25 minutes. remove chicken from the stock; let it cool.

2. Debone and shred chicken meat.

3. Combine with marinade and mix well.

4. Mix the chicken meat and cabbage, carrot, fish sauce,marinade ingredients and rau rum. Mix wel. Remove to serving plate then sprinkle the top with rau rum.

This should serve 4 people.
