Garlic Chicken Recipe
What local kine grind is all about in Hawaii; garlic and lots of it!
My version of this delicious…

Ingredients
- 1 head of garlic, diced (NOT MINCED. It is better to use fresh garlic!)
- 2 lemon (squeezed)
- 1 cup white wine
- 5 T paprika
- 1/2 t salt & pepper
- 1/2 butter stick
- 8 cups of vegetable oil
- flour
- 8-16 pieces of chicken wings/drumsticks.
(In this case, I got a mixed bag.)
Method
- In a mixing bowl, add 3 T of paprika, 1/2 (1 lemon) cup lemon, white wine, salt annd pepper. Mix it well and pour over chicken. Mix it together until all are coated well. Let is marinate for an hour in the fridge. Reheat a fryer with the 8 cups of oil for 15 minutes at 350 degrees.
- When marinated, use another bowl and pour the flour. Cover and coat the chickens evenly. When fryer is ready, add 6 chickens at a time and fry for 10 minutes. Continue with the rest of the chicken.
- While that is being done, go on and heat a frying pan. Add the butter, garlic, the rest of the lemon, paprika, and white wine. Sautee until the garlic gets a little golden brown. Once accomplished, turn it off until all chickens are fried.
- Once all fried, add chicken in the frying pan with the garlic and sauces, turn the stove to low and mix it all together until all chickens are coated evenly. About 2-3 minutes.
- Serve it with potato wedges if desired. If you want to add a little more spice, try adding 3 T of tabascoin the marinate and I have tried it with Ranch salad dressing sauce, and it was actually good :]
