The chicken tastes really good and the stew can be done ahead of time and kept in the fridge for even a couple of days before use.

The chicken tastes really good and the stew can be done ahead of time and kept in the fridge for even a couple of days before use. You may also use any part of the chicken that you like for the meat. Serve this with the croquettes or you favorite style chapati (Kiswahili) or burrito. Enjoy!

Ingredients:

  • 300g chicken chunks
  • 2 tbsp vegetable oil
  • 1 tbsp butter 2 green apples, peeled and cut into wedges
  • 1tbsp brown sugar
  • 30ml brandy (optional)
  • 300ml cream
  • 2 tbsp wholegrain mustard
  • Salt and black pepper to taste

Method:

Sauté the chicken and oil and butter to brown and then place aside. In the same pot, fry the apple until it is golden brown then add in the sugar and allow to simmer slightly. Add in the brandy and flambée the apple. Then add in the cream and mustard and allow to simmer. Place the chicken chunks into the apple mixture and cook on low fire until the chicken is well cooked. Season with salt and pepper. Serves 2.
