Greek Chicken

Here is a good grilled chicken recipe. It would be nice to make this in the summer when you don’t want to heat your house with the oven.

3 cloves garlic, chopped

1 tsp salt

1/2 cup olive oil

1 Tbsp fresh chopped rosemary

1 Tbsp fresh chopped fine

1 Tbsp fresh chopped oregano

4 pound chicken cut into pieces

2 juiced lemons

In a glass dish, combine olive oil, salt, garlic, rosemary, thyme, oregano and lemon juice. Add chicken pieces, cover and marinate overnight in a refrigerator.

Lightly oil cold grill rack marinade and preheat grill for medium high heat.

Reduce heat to medium low and remove chicken from marinade, discarding marinad. Grill chicken, turning every 5 minutes, for 30-35 minutes or until meat thermometer in thickest part registers 170 degrees F for breast meat or 180 degrees F for dark meat.

    A recipe with chicken and garlic and you can’t go wrong.
