Healthy Asian Style Green Beans, Chicken and Potatoes

Low fat low cholesterol stir fry with green beans, chicken and potatoes.
Ingredients:
- Fresh garden green beans 2lbs
- Large baking potato
- Medium red onion
- Skinless boneless chicken breast
- Chopped ginger 1 table spoon
- Chopped garlic 1 table spoon
- Cooking oil (sesame, canola or vegetable) 1/8 cup
- Curry powder 1 teaspoon.
Method:
- Peal and chop potato into chips
- Heat cooking oil in wok or medium frying pan at medium heat 4 minutes
- Fry potatoes in the pan until brown
- Remove fried potatoes then add salt to taste
- Allow oil to cool to low heat on burner
- Add chopped garlic and ginger and stir for 2 minutes in the oil
- Add 1 teaspoon curry powder and stir until oil is yellow
- Add cubed about ½ inch chicken breast stir until all sides are white in color
- Add browned potatoes and cut fresh green beans then stir occasionally about every 3 minutes until green beans are half cooked
- Add diced red onion cook for another 5 minutes
- Serve with rice side
