Honeyed Chicken and Herby Rice

Quick, easy and tasty recipe.
I am a lousy, lazy cook. So when I managed to cobble together something of my own accord that actually tasted really good, I started making it an awful lot. It’s quick, easy, tasty, relatively cheap and pretty healthy despite tasting like a naughty treat. It’s not much of a recipe, granted, but it’s dead good.

Ingredients
- 1 chicken breast per person (or more if you’re feeling greedy)
- Honey (enough to cover the chicken)
- Rice
- Herbs (whatever your favourites are in whatever quantities you like, I like to use sage, thyme, rosemary and oregano… lots of ‘em!)
- Salt to taste
- Oil (for cooking with)
Method
- Chop the chicken into bite-sized pieces.
- Heat up a teaspoon of oil in a frying pan and cook the chicken, stirring occasionally.
- While that’s cooking, put the rice on, seasoning it with the herbs.
- When the rice is nearly done and simmering away in the back and the chicken is cooked through, pour in the honey, just enough to cover the chicken and a sprinkling of herbs to taste, and keep stirring until the honey starts to caramelise around the chicken.
Take off the heat and enjoy!
If I’m feeling especially lazy, I put the vegetables in with the rice or with the chicken for extra sweetness. You can try adding cayenne pepper or paprika if you prefer spicier food. I often adapt this recipe into the “bung everything I can find in the larder” recipe, which also works surprisingly well!
