Contrary to what you would read from some articles, chicken should ideally be grilled for 25 minutes under charcoal average fire. With this rate, the size should at least be a quarter of the entire chicken. You can adjust the grilling time of any part smaller. With or without marinate, it is just the average doneness recommendable for a chicken to be eaten safely.
But if you’re using a gas grill, average time is seven minutes per side. Although with these rates, there are preparations so that your chicken will easily cook and come out tastier. Also, the most ideal state of a grilled chicken is to find it juicy, which is very difficult when you cook it very well-done, but can be dangerous to health and disgusting if eaten underdone.
When you grill chicken under coal, it is not good to opt for a big fire. Use less charcoal and if you need to increase the amount of heat, just add some more coal gradually. Big fire can easily burn the chicken and you wouldn’t want to eat carcinogens very much. But, it is best to use charcoal than other grilling methods according to popular demand. The tangy effect is more accented in grilled, smoked chicken.
A properly cooked chicken should still be moist and juicy, but juicy doesn’t mean bloody or saucy. Salmonella is a risk factor and you don’t want that. First, make sure you just put right amount of marinate, or before grilling, let it sit for about 10 minutes without marinate. Make sure the temperature is hot enough but the fire isn’t big. While grilling, avoid tossing or turning it. One flip would do. If you have a griller with a closed lid, you can do so if your fire is low. Remember that you can only do this if you fancy eating a well-done chicken. Otherwise, keep it grilling in the open.
A properly cooked chicken should still achieve the taste accompanied by the twist of the additives. So, if you go for citrus chicken and it tastes like coal, then your preparation isn’t effective. Too flavor in the chicken will totally run down all the juices, especially because the texture of chicken meat is more likely to secrete juices while being cooked. Grilling chicken is fun and simple, but sometimes the simplest things are taken for granted.
