Italian Chicken
This Italian Chicken recipe will delight one and all!

Italian Chicken
6 eggs, beaten
2 cups grated Parmesan cheese
3/4 cup bread crumbs
6 cups finely chopped or ground cooked chicken
5 tablespoons butter or margarine
1/2 cup chopped green pepper
3/4 cup chopped green onions
2 taablespoons vegetable oil
3/4 cup water
2 (15 ounce) cans tomato sauce
1/2 teaspoon Italian seasoning
1/2 teaspoon dried basil
2 cloves garlic, crushed
1/2 teaspoon pepper
3 1/2 cups shredded Mozzarella cheese
Preheat oven to 350 degrees.
Combine eggs, Parmesan cheese and bread crumbs. Stir in chicken and mix well. Shape into 18 to 22 patties.
In a large skillet, cook patties in butter over medium heat for 2 1/2 minutes on each side. Drain patties and arrange in a 13 inch by 9 inch baking dish.
In a skillet, heat oil saute green pepper and onion until tender. Remove from heat and add remaining ingredients, except cheese.
Spoon sauce over chicken patties. Sprinkle with cheese.
Bake for 25 minutes or until hot.
