Kesturi Chicken

a Recipe for Kesturi Chicken.

Ingredients:

  • 3 tablespoon cooking oil
  • 1-2 lb chicken
  • 5-6 musk lime (limau kesturi)
  • 3 tablespoon light soy sauce
  • 1 inch cinnamon
  • 1 dessert spoon sugar or brown sugar
  • 5 shallots
  • 3 chilies
  • 1 teaspoon cornflour and 1 teaspoon water to make thickening
  • Parsley

Method:

  1. Cut the chicken into pieces. Chop the shallots and slice the chilies and set aside.
  2. Extract the juice from the limau kesturi and scrape out some of the pips. Mix it with soy sauce, cinnamon and sugar (or brown sugar)
  3. Fry the shallots and the chilies in 3 tablespoon cooking oil and add in the chicken meat.
  4. Add salt to taste and add the limau kesturi sauce prepared earlier.
  5. Cover and simmer until the chicken meat is tender. Add in thickening. Garnish with parsley when serving.
