Lemon Curry Chicken Recipe.

Ingredients

  • 2 (12-oz) pkg. frozen asparagus, thawed & drained
  • 4-6 boneless chicken breasts cut into ½-inch strips
  • salt and pepper to taste
  • 3 T. butter
  • 1 can cream of chicken soup
  • ½ c. mayonnaise
  • ¼ c. lemon juice
  • 1 tsp. curry powder
  • ¼ tsp. ginger, ground
  • 1/8 tsp. pepper
  • ½ c. almonds, sliced and toasted

Method

Cook and brown chicken strips in butter and salt and pepper. Place asparagus in a pan. Mix soup, spices, and mayonnaise and lemon juice together. Layer the chicken over the asparagus and spoon soup mixture over top. Top with almonds. Bake 35 minutes at 350 degrees.
