Lemon Curry Chicken Recipe.
Ingredients
- 2 (12-oz) pkg. frozen asparagus, thawed & drained
- 4-6 boneless chicken breasts cut into ½-inch strips
- salt and pepper to taste
- 3 T. butter
- 1 can cream of chicken soup
- ½ c. mayonnaise
- ¼ c. lemon juice
- 1 tsp. curry powder
- ¼ tsp. ginger, ground
- 1/8 tsp. pepper
- ½ c. almonds, sliced and toasted
Method
Cook and brown chicken strips in butter and salt and pepper. Place asparagus in a pan. Mix soup, spices, and mayonnaise and lemon juice together. Layer the chicken over the asparagus and spoon soup mixture over top. Top with almonds. Bake 35 minutes at 350 degrees.
