Madras Pepper Chicken

Hot, spicy chicken fry.

Madras Pepper Chicken

 

 

Ingredients:

 

1/2 kg –Chicken (Small version) skinned, washed and cut in small pieces

1 large onion –chopped roughly (optional)

½ tbs turmeric powder

1 tsp pepper powder

4 pods of garlic -chopped

½ tsp cumin seeds

1 strand of curry leaves

Coriander leaves

½ cup ghee (clarified butter)

 

Method of preparation:

 

Place a pre-heated pan on medium flame and put in your chicken pieces, turmeric powder, salt and 1 cup of water. Allow to cook well till chicken is soft and water evaporates. Remove and keep aside.

Heat pan with ghee on low flame throw in your curry leaves, cumin seeds, pepper powder and chopped onions, stir fry well. Add chicken and allow cooking for another few minutes until pepper powder and other ingredients stick to the chicken, check for salt, add if necessary.

Garnish with coriander and a squeeze of lemon juice if required.

 

Serve hot!

 

Chef’s tip:

Don’t put salt in water until it comes to a boil –Salt water has a very high boiling point
