Mangalorian Chicken/mutton Curry
Delicacy of South Canara.
Ingredients:
500 gms – Mutton/chicken
3 – Onions (2 Nos. for paste & 1 Nos. slice)
2 – Tomatoes
1 tbsp – Khus khus
½ tsp – jeera
½ tbsp – Coriander Seeds
6 - 7 – Red Chilies (as per your taste)
2 – Cardamoms (spice)
½’’ – ginger
4 – Cloves (spice)
6 – Cloves of garlic
½ – grated coconut
½ tsp – turmeric
Ghee
Salt
Method:
In a pan with little ghee roast Khus khus, jeera, coriander seeds, red chilies, cinnamon, cloves, coconut & 2 onions (roast till it start leaves its fragrance on a medium heat). Then add ginger & garlic to the roasted masala & grind to a fine paste (add turmeric also).
In a pressure pan take a little ghee around 1 tbsp & fry sliced onion (till translucent), add tomatoes and cook till it becomes soft then add mutton & cook (for mutton add little gravy left-over water instead for pure water). Add salt. When mutton is cooked add the above masala stir it well, (as per your consistency add water to the gravy), cook till it gets nice boils for 5 mins. You can also add hard boiled eggs.(optional).
And itz ready for serving.

What is jeera and what other dishes would I use it in? This sounds delicious.

Hi Meg Smith, cumin seeds are known as jeera
