Not Really “Fried” Chicken
Do you like the taste of crunchy fried chicken, but hate the greasy taste?
This recipe will give you the same flavorful crunch of fried chicken without frying.
Ingredients
- 3 to 4 pounds chicken pieces
- 2 cups instant mashed potatoes
- 3 Tablespoons butter
- Salt and pepper
Method
- Wash the chicken pieces but do not drain off excess water so that the chicken will be moist.
- Salt and pepper each piece to taste.
- Roll each chicken piece in the instant mashed potatoes until completely coated.
- Place the chicken skin side up on a baking sheet or shallow pan that has been lightly sprayed with non-stick spray.
- Melt the butter and pour over the top of each chicken piece carefully so that the potato coating does not wash off.
- Bake in a 350 degree oven for 20 minutes.
- Turn the chicken over and continue to cook an additional 20 minutes or until chicken is golden brown.
You will never know that this chicken is not fried except that it does not have the grease.
