Old Drye Frye Chicken.
• 1 frying chicken, cut into pieces
Add any of the following seasonings (or others of your choice) to one cup of flour:
• 2 teaspoons salt
• pepper to taste
• garlic powder
• onion powder
Mix seasonings and flour so spices are evenly distributed.
Roll chicken pieces in flour until covered and shake off excess flour.
Put enough oil in an iron skillet to make a depth of about a 1/2 inch. Heat until the oil is very hot (about 365° F) and spits when a drop of water hits it, or you can test by dropping a 2-inch square of bread into the oil. It should turn golden brown in 1 minute.
Use tongs or a long fork to gently place floured pieces of chicken into the frying skillet. Turn on each side until each piece is golden brown on all sides (about 7 minutes each side). Reduce heat to medium while you are cooking chicken. Once each side is golden brown, cover and continue cooking for 5 to 10 more minutes or remove from skillet and continue cooking in a 350° F oven. Total cooking time: 30 to 35 minutes, depending on the size of each piece of chicken.
